I'm making a meal plan for my mom who has diabetes. What foods should I include?My mom has diabetes and she hasn't really been watching her diet like she should. She's making really, really small baby steps and is finding it hard to stay away from sodas and processed meats. Please give me some easy meals to prepare for her. And also give me an idea of what foods she should be eating. I also notice that she often resorts to eating what's convenient and quick. If you have quick meal ideas for diabetics that would be great too. Thanks.

Hi. Meal planning is best done by a diabetes dietician. But meanwhile see if you can get a copy of the books "Diabetes Meal Planning Made Easy" and Diabetes A to Z from the American Diabetes Association.These were given to me free by my Diabetes Dietician but normally cost $ 14.95 each.. They may have copies at your library. But basically, fruits, vegetables and fish (tuna, salmon, herring, sardines, flounder and bass are good--have Omega 3 fatty acids which we don't get enough of. I eat chicken but not fried, we have to watch fat intake to avoid heart problems. Limit starchy foods like corn, green peas, pasta and white potatoes. For drinks try Cystal light (no sugar but tasty) and decaf, natural tea, green tea is good too. I use Spenda to sweeten. A natural sweetner is stevia. Some drug store, grocery stores and health food stores carry it. If not call 877-989-9954 or 800-899-9908 to order.

Some meats. Like Chicken Pasta. The Pasta is really good for diabetics. Uh Some cheese like lasanga. Cheese and meats are free foods. So they dont have cars or sugars. It would be good for your mother if you made like a homemade pizza because it includes cheese and meat. You could add some green peppers because they dont have carbs in them either. I hope i helped!

Breakfast: egg whites, coffee. If she wants grains, oatmeal topped with cinnamon
10;30 A, snack: walnuts
Lunch: Large green salad, tomatoes, olives, cucumbers, plus skinless chicken, turkey or fish
Dinner: Large plate of green vegetables( spinach, broccoli, kale, cabbage) plus skinless chicken, turkey or fish
Snack: red bell peppers with tuna fish dip
